A few zips of zest can zap flavors to the next level. This video shows young cooks how a microplane and citrus make magic together—quickly, safely, and without that bitter pith. (Say that last part five times fast!)
The basic method:
1. Choose your citrus: lemon, lime, orange, or grapefruit
2. Lay down a sheet of parchment paper.
3. Using a fine grater or microplane, carefully brush the citrus against the blade 3-4 times, and then rotate. Stop just before the white part appears: This is called the pith and it tastes bitter!
4. Tap the grater or microplane onto your surface and watch colorful specks of zest fall to the paper. Look underneath your zester. It’s likely you’ll see a lot more stuck to the grate.
