Red Velvet Candy Cane Cake Pops

Who doesn’t love cake on a stick? Make these red, velvety cake pop bites for the holidays and beyond! This one’s for chocolate lovers (that’s us, too.) This recipe has been generously provided by AMERICAN HERITAGE CHOCOLATE.

Step 1

Bake cake mix according to box directions and let cool completely in the 13×9 inch pan.

Step 2

Crumble the red velvet cake into a bowl. Next, add the cream cheese frosting and finely ground candy canes. Using clean hands, mix well. Add more frosting if the cake crumbs are not coming together, 1 tablespoon at a time.

 

Sous Tip: To grind the candy canes, break them into large pieces. Put the broken pieces into a ziplock bag and lay the bag flat on your counter top. Using a rolling pin, whack the the bag until the candy canes are crushed, and then more until finely crushed.

Step 3

Form the cake mixture into 2-inch balls, then place them on a cookie sheet lined with parchment paper.  Place cake balls in freezer until firm, about 30 minutes.

Step 4

At about the 20 minute mark, start to melt the chocolate: Pour the chocolate into a microwave-safe bowl, and microwave for 30 seconds. Carefully remove the chocolate and stir with a rubber spatula. Put the chocolate back into the microwave for another 30 seconds and repeat this process until the chocolate is melted and smooth.

Step 5

Remove the cake from the freezer. Dip the end of the lollipop stick into the melted chocolate then into the center of the cake pops.

Step 6

Return the cake pops back onto the parchment paper and freeze until firm. The cake pops can stay in the freezer until you are ready to dip them fully into the chocolate.

Step 7

Working a few at a time, dip the frozen cake pops into the melted chocolate, then immediately sprinkle with the crushed candy canes.

Step 8

Place the cake pops back onto the parchment lined cookie sheet and refrigerate till chocolate is set and ready to serve.

Step 9

The cake pops freeze well in a well-sealed plastic container. If frozen, let the cake pops sit at room temperature for 15 minutes before serving.
