Eat The Rainbow Ice Pops

These colorful pops contain a FULL RAINBOW or fruit, which makes them a healthy snack any day of the year. Make these dairy free by substituting a dairy free yogurt.

Don’t have an ice pop mold? No worries! Use paper or plastic cups and popsicle sticks. To keep the sticks standing up straight, tightly cover the tops of the cups with plastic wrap and insert the sticks through the plastic into the center of the cups.

Step 1

Make the red layer: If using strawberries, cut the green tops off with a knife, then cut the strawberries in half. In a blender or mini food processor, combine the strawberries or raspberries and ¼ cup of yogurt. Blend until smooth (add a little bit of water if the mixture is too thick to blend). Pour the mixture into a cup and set aside.

Step 2

Make the orange layer: In a blender or mini food processor, combine the mango or peaches and ¼ cup of yogurt. Blend until smooth (add a little bit of water if the mixture is too thick to blend). Pour the mixture into a cup and set aside.

Step 3

Make the yellow layer: In a blender or mini food processor, combine the pineapple and ¼ cup of yogurt. Blend until smooth (add a little bit of water if the mixture is too thick to blend). Pour the mixture into a cup and set aside.

Step 4

Make the green layer: Cut the kiwis in half crosswise and use a spoon to scoop out the fruit. Cut the fruit into chunks. In a blender or mini food processor, combine the kiwi chunks and ¼ cup of yogurt. Blend until smooth (add a little bit of water if the mixture is too thick to blend). Pour the mixture into a cup and set aside.

Step 5

Make the blue/purple layer: In a blender or mini food processor, combine the blackberries and ¼ cup of yogurt. Blend until smooth (add a little bit of water if the mixture is too thick to blend). Pour the mixture into a cup and set aside.

Step 6

Using a spoon, divide the red layer among ice pop molds (the thickness of the layer will depend on the size and number of your molds). Next, carefully spoon the same amount of the orange layer over the red layers. Repeat with the yellow, green, and blue/purple layers. Insert the ice-pop sticks and freeze until solid, at least 6 hours or overnight.
