Puff Pastry Hand Pies with Mixed Berries

Store-bought puff pastry is a magical ingredient. You can make pie in half the time and without the mess  (a parental favorite!) Did we mention it comes already prepared, and ready for you to turn it into something flaky, golden and delicious—in this case, mixed berry hand pies.

MAKE IT YOUR OWN: in this recipe we’re using frozen mixed berries, but you can substitute and experiment with your personal favorites. Hint: we also love these pies with apples, peaches, plums and/or blueberries!

Step 1

Let your puff pastry thaw in the refrigerator overnight. Remove when you’re ready to use.

Step 2

Your package will contain 2 sheets. Starting with the first sheet, place it on a floured surface and gently roll it flat.

Step 3

Following the folded seams of the pastry, use a pizza cutter or sharp paring knife to cut the sheet into 6 pieces (cut along the folded seams, and then one slice across the middle.) After you’ve cut both sheets, you’ll have 12 pieces, one for the bottom half of your pie and one for the top. Set aside onto a parchment lined baking sheet, ideally back into the refrigerator to stay cool.

Step 4

In a medium-sized saucepan, combine the berries, water, sugar, cornstarch and salt. Cook over medium heat until the fruit starts to break down slightly, stirring occasionally about 5-10 minutes. The berries will start releasing some of their juices.

Step 5

Remove the berries from the heat and let them cool, about 20 minutes.

Step 6

Time to assemble the pies! Spoon 2-3 tablespoons of berry filling onto 1 pastry rectangle. Brush the outer edges of the pastry with egg wash and then top with another pastry layer.

SOUS TIP: The egg wash will act like glue that will help the layers stick together!

 

 

Step 7

Using the top half of a fork, crimp the edges of the pastry on all sides.

Step 8

Using a paring knife, cut 2-3 slits on the top of the pies.

SOUS TIP: this will allow steam to escape from the inside during the baking process.

Step 9

Brush the tops of the pies with egg wash.

GROWN UP ALERT: Place the pies into a 400 degree oven for about 20-25 minutes, or until golden and puffy. Let them cool for 15 minutes before taking a bite!
