Pea Pesto on Toast

Behold Pea Pesto (or “Shrek Sauce” for the littles who are fighting the green). We call peas the gateway vegetable, and this mild-tasting pesto gets kids one step closer to other green things. Refreshing, bright, and cheerful, it can be tossed with pasta or spread on crostini (and it freezes well, for those nights when you have even less time).

Gather Ingredients

Cooking Instructions

Step 1

Add all the ingredients except the olive oil into a food processor or high powered blender. Pulse until combined. With the machine on, slowly drizzle a steady stream of olive oil into the pesto until it’s smooth and creamy. (You can add more olive oil if you want a looser consistency.) Let sit for at least 30 minutes so the flavors can combine.

Step 2

For Pasta:

Cook the pasta according to the package directions and reserve some of the pasta water. Drain the pasta, then add a large spoonful of pea pesto to the noodles. Add 1-2 tablespoons of the reserved pasta water and mix. (Add more pasta water, 1 tablespoon at a time, until you’ve reached your desired consistency.) Top with Parmesan cheese and enjoy!

For Crostini: 

Smear crostini with a dollop of pesto. Garnish with Parmesan cheese and fresh peas.
