German Chocolate Dutch Baby

Also known as a Dutch baby, this traditional German pancake is kissed with chocolate and full of fanfare. With the use of a hot cast-iron skillet, this recipe requires some adult collaboration.

Cooking Instructions

Step 1

Preheat oven to 425°F. In a small mixing bowl, add the flour, salt, brown sugar, espresso powder (if using), and finely grated baking chocolate. Whisk all the ingredients together, then set aside.

Step 2

Place a 9-inch cast iron skillet into the oven and allow the skillet to heat.

Step 3

Place eggs, milk, and vanilla into a blender and pulse until well blended. Add flour mixture and blend for 15-20 seconds or until the mixture is completely smooth.

Step 4

GROWN UP ALERT!

Using oven mitts, remove the cast iron skillet from the oven (this will be very hot.) Drop the butter into the skillet and allow it to melt. Carefully (and using oven mitts) tilt the pan so butter coats the entire bottom of the pan. Next, pour the batter into the pan and bake for 20-24 minutes or until the pancake is puffed.

Step 5

 

GROWN UP ALERT!

Remove from oven and serve immediately with fresh berries, powdered sugar, and, if desired, syrup.
