Place a heat-safe bowl over a pot of simmering water. Add the coconut oil and chocolate to the bowl and and melt, stirring occassionally.
Add vanilla and chili powder sand stir.
When chocolate is completely melted and smooth, remove from the heat.
Pour half of the chocolate into the ice cube tray swirling and banging the chocolate around the sides to distribute. The chocolate will be slightly thick.
Place the ice cube tray in the freezer for 3 minutes, so that the chocolate can set.
Remove the chocolate from freezer and fill each cup with desired filling (1 maraschino cherry, ½ t peanut butter or 2 mini marshmallows).
Pour the rest of the melted chocolate over top of the fillings, making sure they’re completely covered. You may have to put the chocolate back over the simmering water to melt again, or loosen it up.
Place the tray back in the freezer for an hour to completely harden.
Gently turn chocolates out of the ice cube tray, twisting to loosen, and serve. Store chocolates in the refrigerator.
